Strict yield control through consistent pruning and thinning.
Hand picking in the cool morning hours. Instant whole grape bunch pressing and then natural primary treatment by cold sedimentation . Slow fermentation in temperature-controlled stainless steel tanks. Five months fine yeast contact, gentle handling during the winemaking and natural cold stabiluitation before bottling.
