vinification:
Strict yield control through consistent pruning and thinning. Hand picking in the cool morning hours. Fermentation in temperature-controlled stainless steel tanks using reassembly. Gentle pressing and 8 months aging in stainless steel tanks and 10% in French oak barrels, gentle handling during the winemaking and natural cold stabilization before bottling.
